Top 5 customer favourites

At our omakase restaurant in London, certain dishes have captured the hearts (and taste buds) of our guests. Here are the top 5 favourites, each offering a unique blend of flavours and textures that reflect the essence of our cuisine:

1. Hand-dived scallop with caviar
Hand-dived scallop from Orkney Island that is tartared, topped with caviar and a drop of hazelnut oil. The candied kombu tuile adds a delightful crunch, contrasting the sweetness of the scallop and the saltiness of the caviar. The interplay of soft and crunchy textures makes this dish a standout.

2. Abalone risotto with seasonal truffles
Our French abalone risotto is a creamy indulgence, achieved with egg yolks instead of cream, allowing the delicate texture of the thinly sliced abalone to shine. Shaved seasonal truffles add a rich aroma and subtle nuttiness, making this dish a rich, earthy delight. For our prestige guests, a touch of caviar elevates the experience.

3. Smoked trout, cauliflower puree and yuzu jelly
This visually stunning dish features locally sourced Hampshire trout, smoked with hay and served on a cauliflower purée. Topped with vibrant yuzu jelly, trout roe, and delicate flowers, it perfectly balances smoky, acidic, and creamy flavours, making it a guest favourite.

4. Signature Toro Taku handroll with caviar
Our Signature Toro Taku Handroll is an indulgent treat, featuring a luxurious blend of akami (leaner tuna) and toro (fatty tuna), paired with caviar for an extra layer of richness. For a more balanced, traditional option, customers can choose takuan (pickled radish) instead of caviar, adding a refreshing contrast to the richness of the tuna.

5. Mont blanc
Our Mont Blanc dessert is a delightful surprise, often noted for its presentation resembling a bird's nest. Layers of mascarpone cream, whisky-soaked genoise cake, and chestnut cream are hidden under a dark chocolate sugar nest. Unlike traditional omakase restaurants, which typically offer fruits or a sweet tamago, we elevate the experience with sophisticated desserts like this, which are indulgent yet not overly sweet.
