Fish Sourcing: All of our fish, except for hamachi (yellowtail imported from Japan), is locally sourced from Europe, predominantly from Spain and Portugal. We choose to source locally to ensure maximum freshness, which is essential for delivering the best omakase experience. In particular, our tuna comes from Spain, known for its outstanding quality and rich flavor.
