At TAKU, our commitment to sustainability is at the heart of everything we do. Sourcing Locally and Sustainably
Our approach to sourcing is simple: we aim to use ingredients that are as local as possible. By showcasing Europe's finest produce, we can offer our guests the freshest seafood, shellfish, and vegetables without the need to import everything from Japan. With the exception of key ingredients like yellowtail (hamachi) and fresh wasabi, most of our fish and seafood are sourced from local waters.
We take great pride in sourcing fish such as trout from farms in Hampshire, where ethical and sustainable practices are followed. These relationships with local suppliers ensure that we serve only the freshest ingredients while supporting regional fisheries and reducing our carbon footprint.
Quality Vegetable Sourcing from Primeur
For our vegetable produce, we partner with Primeur, a premium supplier based in New Covent Garden. Primeur sources high-end, seasonal products directly from farms, ensuring that we have access to the best produce available. This partnership allows us to work with farms that prioritise sustainability while ensuring the quality of ingredients that are essential to our dishes. Primeur primarily serves high-end restaurants, making them an ideal partner for our commitment to both quality and sustainability.
Minimising Waste in the Kitchen
At TAKU, sustainability also means making the most of every ingredient. We are committed to reducing waste wherever possible by using every part of the fish or vegetable in our kitchen. For example, fish bones and offcuts are transformed into rich broths, ensuring that nothing goes to waste. This resourceful approach not only minimises our environmental impact but also allows us to create bold, flavourful dishes that highlight the depth of our ingredients.
